Pumpkin, a popular flavor for the holidays, appears in cookies, breads, muffins, purees, and, of course, pie. Usually flavored with cinnamon, ginger, and cloves, these fragrant dishes are moist and delicious. Try this recipe for pumpkin bread, perfect for breakfast, brunch, or afternoon tea.
 


Recipe for Pumpkin Bread

4-5 medium Granny Smith apples, peeled, cored, and cubed
1 Tbl . flour
1/2 tsp. cinnamon
2 Tbl . honey
1/4 cup flour
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 cup brown sugar, packed
1/2 cup quick cooking oats
1/2 cup (1 stick) unsalted butter, cut into bits
1/4 cup walnuts, chopped (optional)

1. Preheat oven to 375 degrees. Lightly butter an 8 inch baking pan.

2. In a medium bowl, combine cubed apples, 1 Tbl. flour, 1/2 tsp. cinnamon, and honey. Stir to coat the apples. Pour mixture into prepared pan.

3. In a medium bowl, combine 1/4 cup flour, 1/2 tsp. cinnamon, salt, brown sugar, and oats.

4. Add butter bits to oatmeal mixture and cut in with a pastry blender or two knives until it resembles coarse crumbs. Stir in walnuts. Sprinkle mixture over the apples.

5. Bake at 375 degrees for 45 minutes, until top is golden and crisp and filling is bubbly.

6. Allow crisp to cool to warm before serving. Serve with ice cream or whipped cream.
