Who can
resist a creamy frozen dessert during summer? These desserts are easy
to assemble, won't heat up your kitchen since they're oven-free, and
bring the fun of the ice cream truck to your dinner table. They're simple
enough for the whole family to enjoy, yet can be served at your next
dinner party.
"Dressed Up" Sherbet
1 pint sherbet, orange (or other desired flavor)
1 pint sherbet, lemon (or other desired flavor)
1 1/2 cups graham cracker crumbs (or vanilla wafer crumbs)
4 Tablespoons butter, melted
2 Tablespoons sugar
1 cup whipped cream, sweetened OR non-dairy frozen whipped topping,
thawed
multi-color "jimmies" or other desired sprinkles
1. Allow first sherbet to soften slightly, then spread in the bottom
of a large loaf pan. Cover pan and place in the freezer for about 10
minutes.
2. Allow second sherbet to soften slightly, then spread on top of first
layer in pan. Cover and freeze again for 10 minutes.
3. Combine graham cracker crumbs, melted butter, and sugar. Mix well.
Press on top of second sherbet layer. Cover and freeze for at least
1 hour.
4. To serve, remove loaf pan from freezer and allow it to warm slightly
(3-5 minutes at room temperature.) Run a knife around all edges of sherbet
dessert and unmold onto flat platter.
5. Top with whipped cream and sprinkles. Cut slices with a warm knife
and serve.
Buster Bar Ice Cream Cake
25 creme-filled chocolate sandwich cookies, crushed
2 Tablespoons butter, melted
1/2 gallon vanilla ice cream or frozen yogurt
1 cup fudge sauce
1 cup Spanish peanuts
2 cups sweetened whipped cream or non-dairy frozen whipped topping,
thawed
1. Combine
cookie crumbs with melted butter and mix well. Reserve 1/2 cup of the
mixture. Press remainder into bottom of a 9 or 10 inch springform pan.
Chill in freezer.
2. Allow ice cream to soften at room temperature for 10-15 minutes.
Spread on top of cookie crust. Cover with plastic wrap and freeze for
at least 15 minutes.
3. Spread fudge sauce on top of ice cream (heat sauce slightly if necessary
to aid spreading.) Sprinkle peanuts over fudge sauce. Cover and freeze
for 5-10 minutes.
4. Spread whipped cream on top of peanuts. Sprinkle reserved cookie
crumb mixture over whipped cream. Cover and freeze for at least 30 minutes
before serving.
